Maayo Hotel brings back Sunday Brunch buffet with a new culinary theme every month

Maayo Hotel has relaunched its Sunday Brunch buffet at Uma Restaurant, introducing a new concept that places a different culinary theme in the spotlight every last Sunday of the month.

For Cebu diners, the refreshed buffet offers more than the usual brunch experience. Each month will showcase a different spread, giving guests the opportunity to explore new flavors and culinary traditions with every visit.

A journey through Southeast Asia

Kicking off the relaunch on May 31 was a celebration of Southeast Asian cuisine, with dishes inspired by the Philippines, Thailand, Malaysia, Indonesia, Vietnam, and beyond. 

Executive Chef Luigi Mangubat and his team curated a menu that showcased some of the region’s most distinctive flavors. For only P950 nett per person, guests were treated to specialties not typically found on the restaurant’s regular menu, including Rendang, Mee Goreng, Ayam Penyet, and Ikan Bakar, alongside a variety of sambals that highlighted the many interpretations of a staple condiment across different cultures.

For Chef Mangubat, the selection was intentional.

“We selected signature dishes from different countries and brought them together in one spread. At the same time, we wanted to introduce guests to some of the region’s lesser-known specialties, not just the dishes they would usually expect to find,” he said in an exclusive interview with CDN Digital.

The result was a buffet that balanced familiar favorites with lesser-known dishes, encouraging diners to step beyond their usual choices.

What’s waiting for you in June

While Southeast Asian cuisine set the tone for the relaunch, guests can already look forward to the next themed buffet on June 28.

In celebration of Philippine Independence Month, Uma Restaurant will turn the spotlight closer to home with a brunch buffet dedicated to Filipino cuisine, highlighting the flavors and culinary traditions that continue to shape the country’s food culture.

For the Maayo team, the buffet is about more than what’s on the table.

“We hope that guests leave with a deeper appreciation for different cultures and traditions and create memorable experiences shared with family and friends around the table,” Chef Mangubat said.

With a new theme taking center stage every month, the buffet offers diners an opportunity to discover different cuisines, cultures, and traditions throughout the year. From Southeast Asia to the Philippines and beyond, the monthly concept ensures that no two brunch buffets are exactly alike.
