Food trip in Gabii sa Kabilin

Experience the tastes, ingredients, and Cebuanos’ ways of cooking who lived at the turn of the century.

Turn a Night of Heritage into a gastronomic experience when the Gabii sa Kabilin 2014 starts at 6 p.m. tomorrow.

Casa Gorordo Museum will offer dishes that shows Mexican-Spanish influence that came in the 1860s in tapas carte and nachos with guacamole salsa. Served with manchego cheese.

Also on the menu are German, Venezuelan, Indian and Danish cooking. Potato salad, German core comfort food, will be there. The difference? Instead of mayonnaise, it will be suffused with meat stock.

“This is not the way we do it in the Philippines, which is good. At least, we get to experience the food culture of other countries, especially those who were part of our history,” said Dr. Jocelyn Gerra, Ramon Aboitiz Foundation Inc. (RAFI) Culture & Heritage Executive Director.

Vienna style sausage will also be served, but don’t expect catsup. Germans eat it with mustard. Venezuelan-style of cooking meat will be presented, paired with corn bread. Visitors can also taste India’s chicken curry. For dessert, Filipino and Danish pastries will be prepared by Radisson Blu.

Asian cuisine turns up in lumpia, barbecue and classic Cebuano comfort food “humba” (slow-cooked pork hocks) in the menu of the Cebu City Museum on Osmeña Boulevard.
