Few things are revered in the culinary world as much as truffles are. There are festivals devoted to them, vacations planned around them, and any chef worth his salt ought to have worked with these so-called “diamonds in the kitchen.” Jason Hyatt, the chef/ owner of The Abaca Group is certainly a chef worth his salt. “Truffles are a special part of Italian cuisine, so we thought it was important that we feature them in Tavolata – even if it’s just for a limited time. We aren’t using truffle oil, truffle salt or truffle paste in our restaurant – this is absolutely 100% the real deal,” he explains.
These special menu items will be offered at Tavolata starting November 1 for an extremely limited time, so if you’re already a fan of their handcrafted pastas, hand-tossed pizzas and pan roasted meats, imagine just how much more special they would be with the black autumn and white truffles that The Abaca Group is flying in at the peak of the Alba truffle season. “We plan on keeping this really simple – a few select pastas, risottos and a couple of new dishes,” says Hyatt.
Gourmands and foodies the world over flock to Alba around this time each year for the Alba International Travel Fair held in the Alba truffle’s honor, but we’re lucky because we don’t have to go very far to get a taste or whiff of it come November 1 at Tavolata: la trattoria di Abaca.
