This remarkable collaboration was beyond the ordinary. It brought the culinary brilliance of Cur8’s Head Chef, Christian Tan, and the artistry of Chef Gianni Grifoni, celebrated for his expertise at Kermit Siargao and La Kantina. Elevating the experience to another level of gastronomic delight was the enchanting mixology of David Abalayan, World Class Philippines Bartender of the Year 2019, who crafted bespoke cocktails that complemented the cuisine. 

A Symphony of Flavors: The 4-Course Pairing Menu

The evening began with an anticipation that hung in the air like a tantalizing secret. Chef Christian Tan and Chef Gianni Grifoni had curated a four-course tasting menu that would perfectly pair The Singleton Whisky. Each course was meticulously crafted to complement the whisky, creating an exquisite tasting experience.

The Singleton 12 Neat/On-The Rocks with Beetroot Cured Salmon and Shrimp Ceviche: This course begins with The Singleton 12, a whisky known for its fresh, crisp notes, served either neat or on the rocks. It’s paired with beetroot-cured salmon and zesty shrimp ceviche, a combination that complements the drink’s smoothness.

The Singleton Orchard with Mushroom Adlai Risotto and Sesame Crusted Tuna: Following that, The Singleton Orchard, a fruity whisky, pairs wonderfully with an earthy mushroom Adlai risotto. The sesame-crusted tuna alongside adds a unique depth and texture, enhancing the fruity notes of the whisky.

The Singleton Smooth Like Butter, Hot Like Summer with Sous Vide Pork Belly and Rendang Sauce: This course features The Singleton Smooth Like Butter, Hot Like Summer, a blend that brings a spicy warmth. It’s paired with rich sous vide pork belly, where the spiciness of the whisky complements the savory pork, and the rendang sauce adds a complex layer to the dish.

The Singleton 12 Neat/On-The Rocks with Chocolate Textures: To conclude, The Singleton 12 returns, served neat or on the rocks, alongside a variety of chocolate textures. The warmth of the whisky marries well with the complexity of the chocolates, creating a harmonious and indulgent finale to the meal.
