Bon Appetit at The Marco Polo

TWELVE noon on Wednesday, Sept. 21, at the Cafe Marco of the Marco Polo Plaza Hotel and the place was getting filled up by the minute with diners come to enjoy the first day of Bon Appetit.

That’s the culinary journey with accent on French cuisine ongoing at the place for lunch and dinner up to tomorrow, Sept. 25, with a genuine Frenchman, Olivier Foucke, executive chef of the Marco Polo in Xiamen, China.

He was on hand to meet the Cebu media and explain some of the dishes he had prepared for the event—beef in white creamy sauce, quails with raisins, a chicken soup, mashed potatoes, and an array of fabulous desserts.

Extending a grand welcome were the Marco Polo’s top echelon—Xavier Masson, Lara Scarrow, Manna Alcaraz, Joward Tongco, Yvonne Silva and executive chef Stefano Verrill.

For those who’d like something special chef Olivier has prepared a three-course dinner with wine pairing at the Blu Bar & Grill, way up 1,000 feet above. You have tonight and tomorrow night, so make that reservation now.

Food seems to be our topic for today, as we remind members of La Chaine des Rotisseurs about the fellowship dinner set for Friday, Sept. 30, at Pino restaurant. Cocktails start at 6:30 p.m.; dinner, buffet style, will be at 8:30 p.m.

Pino general manager Joel del Prado has chosen Viva España for the dinner’s theme, as exemplified by Spanish favorites.
Carving stations will dispense Cochinillo in the style of Segovia, and chicken galantine. Show cooking will be for Paella Mixta and Paella Negra.

There will also be callos, pastel de lengua, chicken with “alcachofas” (that means artichokes), and cauliflower with garlic.

Desserts include Canonigo, Tocino del Cielo and Melocoton en vino (peaches in wine).

Dress code is black jeans with long-sleeved shirts or blouses. The male members will please wear their medallions; the ladies have their special ribbons.
