The second half of 2016 is an exciting time for 32 Sanson by Rockwell as the community comes to life with the opening of two homegrown restaurants from the Alvarez-Sy family, a Cebuano family passionate about sharing their love for food.
Marisse Alvarez-Sy, owner and pastry chef behind Marisse Patisserie, 32 Sanson’s recently launched in-house bakery, spent her earlier years in the kitchen and was inspired by her mother to bake. This influence continues to show through her son, Chef Francis “Izzy” Sy with Kayu Kitchen + Bar.
From the Cebuano word kalayo, which directly translates to fire or passion, Kayu gives Cebu a hot dining experience that satisfies the five senses, staying true to the blazing passion that is common in Cebuanos as a people. As far as tastes go, Kayu pays tribute to the richness of Cebuano culture while incorporating elements from Californian cuisine, creating unique and succulent flavors that burst on the palate.
A fiery new addition to the culinary landscape, Kayu is also owned and managed by Marisse, together with her husband, Francis, and their son, Chef “Izzy” Sy, who is responsible for the restaurant’s savory offerings. Coming from a Cebuano family of foodies, Chef Izzy pursued his passion for food in the Culinary Institute of America in Napa Valley, California. He spent two years at Iron Chef Masaharu Morimoto’s restaurant, Morimoto, where his inclination for reinventing food and flavors was ignited.
Chef Izzy’s personal picks are the glazed salmon with teriyaki sauce, sushi rice cake, and togarashi, as well as the Kayu skillet of short ribs, which takes three days to cook. Expect these and more at the restaurant, which stands proud in its 1950’s architectural design and accents. With custom-made furniture and striking lighting fixtures, the interiors were designed by Marisse herself, with additional structural design by Ed and Mirella Gallego.
